Chef Jeremy

Today, I am passionate about the culinary arts, but I can tell you that it was not always the case. Being younger and not really knowing what I wanted to do for a career, I got into the cooking program just to learn. I told myself that this way, no matter where I landed next, I would still be able to eat well. Rich or poor, ramen noodles or tomahawk steak, my taste buds would always be satisfied.

So it was while taking courses at the "École hôtelière de Montréal Calixa-Lavallée" and then at the "Institut de tourisme et d'hôtellerie du Québec (ITHQ)" that I really fell in love with the culinary world. I was fascinated by the discovery of techniques, products and thousands of possible combinations of flavors. On top of that, it was so satisfying to see that I had the ability to put a smile on the face of those to whom I have the honor to serve my creations! Whether for a celebration or simply for the pleasure of eating, it has become, for me, to bring some joy through my food.

I am of Haitian descent and I grew up in a household where traditional dishes were in the spotlight at breakfast, lunch and dinner. The experience I gained in restaurants, hotels, caterers and other places shaped my journey. Throughout my training, professional or at school, I learned a lot, but I rarely had the opportunity to be in direct contact with my clients.

This is one of the reasons why, today, I combine my cultural heritage with my knowledge to offer you, in the comfort of your home, revisited and refined versions of dishes that are traditionally found in Caribbean kitchens, as well as a totally extraordinary marriage of flavors and products from the islands.

Some would say I'm crazy, but as long as I can make my clients happy with my creativity, that's fine with me.

It doesn't make sense, but it makes perfect sense!
